Chocolate Making: Bean to Bar Production from Ethical Sourcing to Enjoyable Eating
You will learn how to make your very own chocolate bar, starting from cocoa beans. The discussion will start by exploring a few bean origins, then students will take part in hands-on activities for each of the chocolate making steps (roast, grind, winnow, refine, conch, temper, pour, solidify) and end with a discussion on sensory analysis of chocolate. During these activities, the leaders will include video from a chocolate estate, a message from one of the farmers, discussion of how the farm side processing works, a brief history of chocolate, and ways to find your own supply of cocoa beans – exploring ethical production, organic, and fair-trade concepts.
